ok, I don't know if any of you will find this tempting but we sure enjoyed it yesterday. I had to host bridge so that meant taking sandwiches to the bridge location and I wanted something different. Here is what I concocted and it was a hit...


2 3 cups dices cooked chicken
1/2 cup pecans (chopped)
about 1/2 red onion (chopped)
1 tablespoon grated ginger or to taste: I might have used a little more
1/2 cup mayo
about 1 tbl spoon lime soy sauce (of regular soy sauce and a little lime juice)
a little tarragon
some fresh dill
snow peas barely cooked and cooled

Mix all ingredients except the snow peas together. Adjust the moistness according to taste. Some might like it a little more moist, others dryer.

Sliced French bread very thin and spread a little mayo on one side. Top with chicken mixture and 3 snow peas. add the second slice of bread. I made 8 sandwiches and they were gone in no time. I also took deli sandwiches, but the chicken salad was by far the most popular.

Ooh this sounds perfect for my husband's lunches. He loves regular and santa fe chicken salad. Thanks! Would it taste good with some wasabi powder mixed in the mayo? He has been on a wasabi kick lately.

I'm making this just for a dish, not sandwiches. I'm hoping it will work that way. I have a fresh roasted chicken on hand and this will be a way to use breast since I prefer dark. I'm taking the dish to a luncheon.
