For those who don't have it. Everyone needs it.

2# frozen hashbrown potatoes, thawed
salt & pepper
2T. minced onion
1 can cream of chicken soup
1 pint sour cream
2 cups grated chedder cheese
1/2 cup butter or margerine, melted

Mix the soup, sour cream and melted butter. Stir in remaining ingredients and place in a 9x13" pan. Bake 350 until bubbly (40 mins or so)

I would like to add that if it is made ahead and sits overnight in the fridge it tastes even better when it is cooked!

Thanks for the recipe! What would you eat with it? I mean - What kind of meat would you have? Or you wouldn't?

It's good with ham, or it would be good with burgers or meatloaf. I think it is good with anything you'd serve macaroni and cheese with. Hope you like it.

It is good with turkey. I use the hash brown patties instead of the regular hash browns(can be frozen) and line them up on the bottom of the pan. I mix the remaining ingredients and spread on top of the HB patties. I also put crushed corn flakes on top of the mixture and then drizzle some melted butter on top of the crushed corn flakes. Bake as mentioned above. mmmm good!
