Default Favorite quick, convenience foods recipes?

You may have read the thread where I slaved over scratch recipes only to have them rejected for some instant pudding or coolwhip creation.
Seriously, who has some really good recipes using convenience foods? I'm keeping an open mind.

Easy Chicken-Ham Casserole

8 oz. sour cream
1 can cream of celery soup
3 Large or 4 Med. chicken breasts, boned, skinned and halved
10-12 slices Deli-ham
12 oz. Shredded Swiss Cheese (or can use Cheddar)
Lawry's Seasoned Salt

Mix sour cream and soup in a bowl. Place ham slices in bottom of medium baking dish (I use corning ware type). Layer chicken breasts over ham slices. Sprinkle w/ Lawry's Seasoned Salt. Spread cheese on top of chicken. Pour soup/sour cream over all. Bake at 350 degrees for about an hour or til bubbly.

I often boil the chicken breasts for about 30 mins. b/f making the casserole, and then only cook it for about 35 mins.

Default Here's what my trifle got passed up for!!!!

No one cared about my trifle, but this, from my sister, was a big hit last Christmas. And it uses Cool Whip.


Strawberry De-lite

1 lg. Angel Food Cake
3 lg. Pkgs. strawberry Jello
1 qt. fresh strawberries
1 lg. container Cool Whip

Place the angel food cake in a large bowl. (You will serve in this bowl so pick something you can take to the table). Cut two circles into the cake (like rings). Make Jello as directed. Let Jello cool somewhat, but not to room temperature. Pour Jello over top of cake. Make sure it seeps down into the space between the rings. Put strawberries in the center of the cake. Put in fridge to gel - leave for several hours.

When ready to serve, "frost" with Cool Whip.

I hear where you are coming from. A few years back I slaved and spent a fortune to make a really fancy meal. My son came home. "Mom, you know I'd rather have pot roast." By pot roast he doesnt even mean real pot roast--->he means a) open crockpot and insert pot roast b) dump a can of campbells cream of whatever soup and envelope of dry lipton onion soup on top c) close, turn it on and in 8 hours dinner.

Twinkie Cake

Fill a 13-in. x 9-in. pan/dish with yep Twinkies. (Like 2 boxes.) Mix strawberry gelatin with the boiling/cool water according to package directions (I believe 1 large package, maybe 2-you want enough to cover the Twinkies). Dump it over the Twinkies. Refrigerate til set. Slather with chemical and sugar laden Cool Whip. ;-)

PS Also check out the magazine "Simple & Delicious". (It used to be called "Quick Cooking".) It consists of about 120 recipes in every issue of what to do with gelatin, instant pudding, Cool Whip, box mixes and frozen stuff.

This makes an easy light dessert-
Layer a 9x13 dish with chocolate graham crackers.
Top with instant chocolate pudding
Make raspberry Jello-and chill til not really set but able to pour over pudding
Refrigerate until Jello set
Top w/ the ubiqutous Cool Whip
Sprinkle with chocolate chips.

Take a big jar of Velveeta, scoop it out, and heat it in a sauce pan.

Take 1 lb. of fake lump crab meat (what do they call it????) and put in the velveeta. Heat both together, stirring.

Then dump the mixture into a cute serving dish. Sprinkle some paprika on top.

Serve w/ your choice of crackers.

Now do I get the points?????

I should definately get points for these!!

These disappear no matter where I take them, the girls at work actually used to fight over them, they would hide them from each other so they could have some throughout the day.

Scotcharoos

1 c sugar
1 c corn syrup
mix together in a pan and put over med-high heat, bring just to a boil and remove from heat
immediately stir in 1 c peanut butter
and pour over 7 cups of rice krispies, mix well and pour into 9X13 baking pan
smooth out but do not push down
melt 3/4 c semi sweet chocolate chips and 3/4 c butterscotch chips together for 4minutes or so in the microwave, stir until smooth and spread out over the krispies
these are best made the night before taking them as they need to set up

Default Berry Cookie Cobbler

I just made this for my co-workers today-the loved it. It's from the Food Network-Sandra Lee's Semi-homemade
2 12 oz bags frozen mixed berries, thawed
1 21 oz. container apple pie filling
1/3 cup granulated sugar
1.5 tsp ground cinnamon
1 roll (18 oz) prepared sugar cookie dough
Vanilla ice cream

preheat oven to 350 degrees

In large bowl mix all ingredients EXCEPT cookie dough and ice cream. Transfer to an 8x8x2 inch baking dish. Crumble cookie dough over fruit, covering thickly and comletely. Bake uncovered until cookie crust is golden and crisp, and juices bubble thickly, about 45 minutes. Serve warm with ice cream.
