I had this with blackened catfish and thought it was really good. If you like this type of salad, give it a try.
I used:
Corn – cooked and cut from the cob
Grape tomatoes, cut in half and seeded
Red onion
Garlic
Cilantro
Lime Juice
Olive oil
Sea salt
