Ingredients:

One packet of yellow rice
Minced garlic (2 - 3 cloves)
Seasoned salt or Sason Goya con Adobo
Skinless, boneless chicken thighs
One jar of medium heat salsa, any brand, or one can of diced tomatoes with mild green chilis. (Salsa is better, more seasoning)
Butter - according to package directions for yellow rice
Olive oil
Chicken stock
Green olives (optional)
Shredded Mozerella or Provelone cheese

Sprinkle both sides of chicken with seasoned salt or Sason, saute in a small amount of olive oil and minced garlic on medium heat in a deep frying pan until brown on both sides.

Pour in jar of salsa, reduce heat and simmer, covered, for 20 minutes

Add chicken stock according to water measurements on the packet of yellow rice.
Add butter according to package directions on yellow rice
When stock begins to boil, stir in yellow rice, wait till liquid begins to boil again, boil for one minute, reduce heat, add olives, simmer for 20 minutes until liquid is absorbed and rice is cooked.

Remove pan from heat

After rice is cooked, remove chicken, shred it and return to pan.

Combine shredded chicken and rice, sprinkle cheese over top, and cover pan until cheese is melted.

I've made something very close to this, but I don't shred the chicken pieces.
Add a drained can of black beans and a drained can of corn, and you've got a whole meal with a salad.
It's very good with Cheddar cheese, too.

One of my former roommates used to make this when we were in our 20s. I still make it occasionally; everyone always loves it.

Chicken Rice Casserole

1 cup uncooked rice (we use Uncle Ben's long grain)
1 can cream of mushroom soup
1 pkg dry onion soup mix (Lipton's, Knorr's)
1 large chicken fryer, cut up

Mix together all ingredients except chicken. In a 3-4 quart casserole dish, place chicken, skin side down, on top. Add salt and pepper to taste and bake at 300 degrees for 3 (three) hours. When chicken starts to brown after 1 1/2 hours, put a lid on casserole.
