What to do with them?? My cucumber vines have really taken off. It seems like every day I'm harvesting half a dozen--more than we can eat.

What to do with them besides hide them in people's cars at church?

Trade them for a vege/fruit you want. My sister visited and left me 7 small cukes, then a co-worker gave me some garden tomatoes the next day. I added chopped purple onion, chopped garlic, cracked pepper, salt and red wine vinegar. I ate that for dinner last night. Today, I brought the leftovers for lunch. Yum!

Cut up some and put them in a pitcher of water. Keep it in the fridge. It's very refreshing

Cut it into matchsticks and serve it over oriental noodles, add some sliced green onions and a small spoonful of cooked ground meat with ginger, garlic, and soy sauce. Cucumber cold, everythig else hot.

Make a salad with cucumbers, tomatoes, black olives, onions, garlic, green pepper, celery. Dress it with balsamic vinegar and olive oil. Top with feta cheese.

Make gazpacho and freeze it for later.
