Count me another that doesn't like cooked carrots. I prefer raw. But hubby hates them raw and perfers well cooked. lol I make these for him all the time:

Esterhazy Sauce also comes from the menu of the great ships of those days - pretty good stuff.

My usual way is steamed with ginger, a pinch of brown sugar and butter.
This week I made roasted root veggies, including carrots, parsnips, beets and turnip. Roast at 425 drizzled with olive oil, until tender and golden. The thing that made it different was the apple cider glaze. Take 3 cups cider, 1 cup white vinegar, 1 T brown sugar. Boil it down until its reduced to about a half cup or so (about 45 mins). Drizzle the glaze over the cooked veggies just before serving.

Yes - you have to try it if you like sauces. My family loves it - they put it on potatoes and veggies too. I like to dig up old recipes from days gone by every now and then.

Brush with olive oil season with salt and pepper (or other seasonings of your choice, I've used a Thai curry seasoning from Whole Foods that worked well) and toss them on the grill. Easy and delicious.

My husband cuts them in matchsticks or batons and steams them in honey and rosewater, and it's fantastic.

This is what I enjoy when I have carrot see if you like it too.



Carrot Curry Ingredients

Steps

  1. Heat oil in a kadai (wok)
  2. Add mustard seeds. When it splutters add turmeric powder ,cumin seeds and fry for a minute.
  3. Add Onions, ginger garlic paste and fry a minute
  4. Add Carrot and mix well.
  5. Add red chili powder,salt,coriander powder mix well and let it cook for 15 minutes
