Been hording some lovely nutty Dutch cheeses for my turkey enchiladas. I found a Latino grocer that sells flavored corn tortillas made in-house (nopales, guajillo, blue corn, etc.) but really inexpensive for a package of 100, like $1.75. For poultry I think red sauce overwhelms the flavor, so I'm doing a bechamel sauce with a little bit of green chile.

Tons of cheese, tons of tortillas...pre-made freezer meals almost forever! Wow, what I need is foil trays to freeze them in. Still some Thanksgiving shopping to do, so that's on my list.

number 1 for us is always, just plain left overs; everything reheated a day or so later. It tastes even better than the first time. Before we even sit down on Thanksgiving day we fill up on appetizers and drinks. By the time dinner starts we are almost full. A day or so later, we have the wonderful turkey dinner all over again. After that it is Turkey soup time or Turkey tetrazzini. And always room of a turkey sandwich.

All the white meat is used for turkey and cranberry sandwiches.
Usually the thigh meat gets mixed with leftover stuffing and gravy and baked in a casserole type dish. It's not pretty but it's delicious.
Legs are normally eaten on meal day.

Vegies I try to only cook enough, I don't like leftover vegies.
