I'm looking for some recipes for really great cooked carrots. I'm in a rut with carrots and just do the same things all the time, bake them or boil them, and would like to switch it up, so any recipes would be welcomed. Thank you.

Steam baby carrot till almost tender. Add some butter, some brown sugar, brandy and dill.

Proportions are to your personal taste.

I don't generally like cooked carrots because of the texture, but pureed carrot soup is delicious.

Default I have a great recipe for glazed carrots...

Two cups of carrots thinly sliced into rounds
1/2 water
2 tablespoons butter
1 tablespoon sugar
1/4 teaspoon salt
1 teaspoon lemon juice

Put all ingredients in a closely covered pot. Simmer the carrots until the water is adsorbed and the sugar and butter form a glaze. Optional, serve sprinkled with chopped parsley.

I always get compliments and I am frequently asked for the recipe when I serve this side dish.

Not a "receipe" per se but

I take baby carrots in a single layer in a microwaveable dish. I add a few tablespoons of orange juice, sprinkle cinnamon and clove on the actual carrots and then a very thin slice of butter here and there all around the carrots. Cover and nuke for 2 minutes or so depending upon the amount of carrots and your microwave. Remove and uncover, stir juices around and baste the carrots, then cover again and nuke again for a minute or so. Of course, this is all depending upon the microwave.

Roasted with a little olive oil, chopped cranberries, a dash of thyme. Just before serving, sprinkle a teeny bit of brown sugar over top, and return to the oven until the sugar is just melted.

I like carrots glazed with honey/ginger/butter or simply dressed with butter and caraway seeds.
