Any reason ricotta was not used? I may try this using ricotta.

I would recommend ricotta if you want it to be more traditional. Italian ravioli is made with ricotta and spinach but there are so many non Italian variations now.

I would use fresh spinach since frozen tends to have lots of stems in it.

I am making this for dinner tomorrow night, fresh spinach would be better and I am using that. I make it with a sage butter sauce.

I made them and they cam out horrible. the filing was delicious but the wontons were gummy an some of filling leaked out.
I will not be making these again however there was a recipe fro crab Rangoon on the back of the package I might try.
