Default Chicken Enchiladas

Here is how I make my Chicken Enchiladas:

Poach chicken breasts or chicken tenders in simmering water until done. Take out to cool and then shred with two forks (you could also cheat and use a rotisserie chicken from the store)

In a large skilled put the shredded chicken in and combine with one can of cream of chicken soup, one can of nacho cheese soup, and some green chili (half a jar). Heat until bubbly.

In the meantime, heat the oven to 350 and spray a large baking dish with Pam. Pour a little bit of green enchilada sauce on the bottom of the pan to keep the enchiladas from sticking......

To make the enchilada, take a tortilla and spread some refried beans in the center. Top with some of the filling from the skillet and roll up, placing the tortilla seam side down into the dish. Continue until the dish is full (I usually cram 8 or 9 in a pan, but some are along the sides)

Cover the enchiladas with more enchilada sauce and cheese, and bake until hot and bubbly. Serve with sour cream, onions, black olives. Whatever you like! They are really good!

I tried this and it was great! I couldn't find the Nacho soup so I used Cheddar Cheese...very yummy and my kids loved it also!

I've made it with the Cheddar Cheese too when I can't get Nacho.....glad you and the kids enjoyed it!!
