After years of big productions this is what I do too

I add about four good shakes of Tabasco Sauce when I put
the Milk & Butter in the sauce pan ( Always use a double boiler )
then just before I serve it I'll add about a 1tsb of lemon juice

I am lazy, I use the microwave with the knorr packets. When I make the bearnaise, I heat up the milk/butter in the microwave for about 2 minutes till butter is all melted. Then I whisk in the packet really well. Then back in the microwave for another 2 minutes and i watch it the last 30 seconds. If it starts boiling, turn it off and whisk once more. Voila, done. And I am usually against microwaves but for the knorr packets, it's good.

I use the blender method also because I don't want my fresh lemon juice to have a "cooked" taste to it.

In blender - the yolks and seasonings. Heat butter until melted hot and gradually pour over blender ingredients. Increase blender speed as you fill.

Very simple, fresh and authentic tasting without the elbow grease!
