Here is a really good Carrot Cake recipe, it's very moist as well.
Just thought I would post in case anyone is interested.

2 cups sugar
2 cups flour, sifted
1 tsp salt
2 tsps cinnamon
1 tsp soda
1.5 cups oil
4 eggs
3 cups grated raw carrots
1 cup chopped nuts

Combine ingredients with an electric mixer, adding eggs one at a time.
Add nuts and carrots last. Pour into baking pan--- oblong, angel food or 2 layers.
Bake in a 350 degree oven for 40 minutes if using a layer pan; bake 1 hour and 20 minutes if using an angel food pan.

Frosting:

3 oz. Philadelphia cream cheese
1/4 cup sour cream
1 tsp vanilla or to taste
2.5 cups sifted powdered sugar

Blend cream cheese and sour cream; add vanilla and powdered sugar. Cake can be frosted while still warm if you prefer.
