2 or 3 boneless, skinless chicken breasts
1 avocado
1/4 chopped onion
juice of 1/2 a lime
2 Tbsp cilantro
salt and pepper to taste.
Cook chicken breast until done, let cool, and then shred. Mix with all other ingredients. Enjoy!

I have enjoyed this also but usually add Romaine lettuce, home-made Pico de Gallo or salsa. Yum!

This is a great way for me to use up leftover guacamole as it won't last the next day. (and yes it's loaded with limes, just doesn't taste great)

I love to just slice avocado onto regular chicken salad, put it on some good hearty bread, and broil it in the toaster oven.

Two of my FAV things...avocado and chicken.

Funny story, when we lived in Hawaii, I had a VERY, VERY tall Avocado tree in the back yard. OMG! The Avocados on this thing were the size of HUGE GRAPEFRUIT, but WAY high up there....could not even reach them with the "obligatory everyone has to buy one mango picking pole". I watched and watched and watched as these 6 avocados got bigger, and bigger and bigger....wanted to ensure that I got them, and not the birds if/when it fell to the ground.

One morning I went out and it was there...in all its glory, laying on the ground, still whole, unbroken by the 3 story fall. I was so thrilled, took the thing in both hands (cause it was so dang huge you could not carry it in one!) into the kitchen and figured all the different ways I would enjoy avocado for the next 2 weeks off of this one huge fruit.

BLAND, BLAHHHH, NO FLAVOR.....bigger than a VW and there was NO flavor, taste, NOTHING. Needless to say, I seldom watched for the others after trying the 2nd and 3rd and finding them to be just as tasteless. Funny how these crazy little fruits have so much flavor, and the huge ones are just "blahhhhhh". LOL
