My neighbor's recipe, thought I'd share.

1 bag of carrots peeled and cut into chunks
3 big sweet potatoes peeled and cut into chunks
1 Tbsp. fresh grated ginger
1 onion chopped
2 celery stalks diced
2 cloves garlic minced
2-3 cups low sodium chicken broth-she used no sodium broth by Kitchen basics
1 tsp. white pepper

Roast the carrots and sweet potatoes on a baking sheet on 400 degrees for about 45 min.

In the meantime sauté onions celery, garlic and grated ginger and white pepper until soft. In a large stock pot add all of the vegetables and broth. Simmer for about 30-35 minutes. Puree soup using a regular blender or immersion blender.
