I have brought this to my neighbor, my trainer,and the manager at the gym and now everyone wants it. I tell them the ingredients aren't free ya know! They want to buy this zucchini bread with chocolate chips from me!

Bumping this up.

I had an abundance of zucchini and yellow squash in my garden. I froze a bunch of it into freezer bags. Yesterday I made two loaves of I believe yellow squash bread(I interchange zucchini and squash all the time when baking or canning). Any way once it thawed there was a lot of water in the bag. I believe this made the bread super moist. It was delicious.


Here is the recipe for my Yellow Squash or Zucchini Bread:

3 cups shredded squash with skins, frozen and then thawed. Use some of the water
1 cup white sugar
2/3 cup brown sugar
2/3 cup canola oil
2 ts vanilla
4 eggs
3 cups flour( I used a new grain flour)
2 ts baking soda
1 ts salt
1 ts cinnamon
1/2 ts cloves
1/2 ts baking powder


Up to 1 cup nuts and/or raisins optional or even chocolate chips….I left out


Mix the wet ingredients except for the squash.

Add the dry and mix.

Fold in squash.

Pour into 2 greased loaf pans and bake for 50 minutes 350 degrees.
