I found both of these about a week ago and have prepared and eaten both. These are very different recipes, but I enjoyed both. The boiling method of Cooking with Dog is a real winner. It's very Japanese. The second video is from a company that is focused on 18th century reenactors' interests, particularly the food of the time.

The second video begins with an interview. The recipe begins at 5:30.

My husband and I join friends each year at the Sherwood Forest Faire (east of Austin, Texas). One of my must-haves while I'm there are the fried Scotch Eggs.
