Made it today actually. And they are all gone. Made the pate choix dough and added 1/2 cup of sharp cheddsr and pepper flakes.

I'm going to try it with locatelli next.

I made gougeres for a party some years ago and the guest didn't EAT them they INHALED them. "Went over big."

I can see why. I made them and all 32 little cheesy but crisp and airy balls were gone in hours at my house. I'm going to make more tomorrow.
