It shouldn't be too hard. I am a baker but not a terrific one. I do make a homemade carrot cake that everyone loves and this seems similar. I'd have to leave out the pecans because hubby doesn't like them, I love them. Let me know how it came out, post a picture. I 'd like to make this as well.

I won't use the pecans either. I'm not a fan of nuts in my baked goods unless it's a pecan pie. I'll post pics later.

I just finished frosting it, will take a photo when I serve it. The frosting tastes really good. Well at first it was too sweet since I followed the recipe. I added unflavored greek yogurt and then it was perfect.

Cake was very good. Family wants more of the pineapple taste so I'm going to up it next time I make it. I did doubled the cinnamon it called for as my cinnamon wasn't strong. As I posted earlier, I added yogurt to the frosting to cut the sweetness, that was good. Since I didn't expect guests, I didn't decorate it.

Looks great! Was the cake it self very sweet?

No, it wasn't which I liked a lot. I might even next time use a bundt cake pan and just make the frosting a bit more drizzly and drizzle just the top.

I did realize that the kids used the almost ripe bananas (pale green tip by stem, rest yellow mostly) instead of the 2 really ripe ones I was saving for this recipe. So that might have contributed.

That looks beautiful. I made my first one awhile back, and I thought mine was too sweet. I am starting to cut the sugar in recipes in half lately, because since I've gone low carb, everything tastes too sweet to me.

I do like sweet tea.....so I might have a high tolerance for sweet now that you mentioned it...lol I don't eat a lot of sweets though so this one seems less sweet to me than let's say a pan of brownies. It would be interesting if another makes it and can tell me if it's sweet or not. I always thought I didn't like too sweet things but that dang Southern sweet tea might have done me in!
