I never heard of this and looked it up. So it's basically a spicy/limey chicken soup? I saw some that looked more like typical tortilla soups but with more lime and others that are labeled Yucatan Lime Soup and it was more of a spicy chicken soup with lime.

Which one do you prefer?

That does sound really good! I am going to make it this week, I have most of the items except the peppers. Thank you!

Honestly, I'd just put it in a cold glass of water. I LOVE lime in my water.

I make a ginger lime chicken.
1 pound of boneless skinless thighs or 1 pound of chicken breast cut into bite sized pieces or into cutlets.
1 Tbsp. fresh grated ginger or 2 Tsp. dried ginger.
1/3 cup low sodium soy sauce
1/4 cup lime juice.
1 tsp. garlic powder or 1 Tsp. fresh minced garlic
1 Tbsp. Olive oil.
mix all together and let marinate for 2 hours or more

You can grill these, or cook them in a skillet or bake them. I usually grill them.

Gimlets are made with Rose's sweetened lime juice, not fresh. I suppose one could sweeten fresh lime juice, but I don't think that the result would be quite the same.
