Looking for new and exciting ways to cook the same old drab chicken breast. It's healthy but very boring unless I can find new ways to cook it. It's also usually dry unless you cook it to just the right temperature. Should be around 155 to 160 internal temperature.
I make Arroz Imperial with poached breasts. It's basically yellow rice with chicken and peas with a mozz topping.
Souvlaki-simplest way is to marinate cut up chicken pieces in red wine vinegar, oregano, rosemary and olive oil. Grill or saute till golden and serve on pitas with the usual toppings. Such as tzaziki, tomato, olives, feta etc.
Mole-Oven roasted chicken in mole sauce. Serve with Mexican rice.
I can go on and on...lol I am not a fan of dark meat on chicken (too slippery) so it's breasts or wing for me. I try to cook it low and slow and keep an eye on it. It's also great in the crockpot. I often will dump in a family package of chicken tenderloin breasts with a bit of mojo and seasonings. Let it cook for 4 hours and drain and keep it in the fridge for various recipes. Stays tender and not dry/firm.
Marinate in Italian dressing overnight. Cook to 155°. Lay a slice or two of Swiss (or Provolone) cheese over the top to melt while the meat is resting.
I also sear a couple of breasts, place them in a baking dish, cover with fresh spinach and sliced mushrooms, heavy sprinkle of Parmesan over everything, pour a small carton of heavy whipping cream over everything and bake at 350° for about 30 minutes.

As I laid in bed this morning thinking abt what to make for dinner, I decided on chicken curry.
I buy this package of chicken curry paste at Sprouts. It's so easy.
Cut up the chick breasts into 1-2 in. pieces, I add abt 1/2 an onion, and maybe some fresh tomato, if
I have one, n cook it all together. Add the paste, 1/2 the package, and some water. Maybe 30mins at the most till it's done.
If I have leftovers, which I always do, I'll roll it in a corn tortilla for breakfast the next day.
Make cutlets from the chicken breasts, pound each cutlet to an even thickness, dip in egg wash, coat in panko, pan fry, serve with pan fried potatoes/onions. The cutlets can also be used for chicken piccata.

You can do the same with chicken breast as you can anything else, baked, broiled, boiled, grilled, or fried.

Take chicken breast out of refrigerator.
Place in garbage can.
Go buy chicken thighs.
This is a complete waste of food and money.
Obviously the original poster did not want chicken thighs or they would have purchased those.
