How long can home made salad dressing using vinegar and oil, etc. be kept if stored in refrigerator? Fresh is always the best, but sometimes if you don't have time...
I make salad dressing in small batches, so it doesn't last more than a week. I keep it refrigerated. Take it out about half an hour before the meal so that the oil can warm up and loosen up.
I can't tell any difference between what is made today and what was made 5 days ago. The big difference is between home made with high quality fresh ingredients and store bought with cheaper components and chemicals
If there are fresh ingredients like fresh garlic, use it quicker than that. There can be problems with storing fresh garlic in oil. The garlic should be down in the vinegar, but why take chances with it.
Thanks. Too bad, I would have wished the other way round, since garlic is more hassle to prepare and vinegar/oil could be easily added at the time of use.
Whatever fresh ingredients you added will be preserved for at least a few weeks by the added acid -- lemon juice, vinegar, etc.
