Always cook first. I use red/green- whatever is on sale and I cook ground turkey in onions,salt/pepper and add pre cooked brown rice and tomato sauce-sometimes a can of mushrooms-then stuff,. Put mozzerlla on top. Bake 350-1/2 hr.

I boil the peppers for a few minutes, make rice, mix the rice with the ground beef (uncooked), put in a small can of tomatoes, seasonings , a bit of tomato sauce on top and bake. Never thought of cheese on top, but I'm going to try it.

I prefer to flame-roast the peppers for a few minutes first. It gives them a really good flavor. You can do it by simply turning your gas stove on low and setting them on the burner. Makes the house smell wonderful, too!

Good idea I never thought to roast them first. Will have to do in oven seeing as I don't have a gas stove.

You have a butane or propane kitchen torch? That works too. You know, like the ones used for doing creme brulee (or plumbing!! Hahaha)

I think I would be a little dangerous with a torch, you should see me with a lighter!

I use 15% ground beef, add a sprinkle of all my spices, stir in pot until a little pink, remove and drain grease.use paper towel to pick up excess if necessary.Boil peppers until 1/2 done.Cook reg long grain rice or quikee rice (choice). Blend meat and rice together.Spoon into bell pepper and top off with a spoon of tomato paste or catsup. Place in pyrex dish, add water to 1/2 level, cover with saran wrap and MICROWAVE 15-20 min at HIGH and SERVE. Call me when its done. Stefhen

I agree, it imparts a much deeper flavour. I would also always cook the meat first but there are other really nice fillings such as a herby couscous or roasted wild mushrooms with garlic and tarragon for example. And it's absolutely gorgeous with pepperonata too.

Roasted and stuffed tomatoes are really yummy too.
