Make a batch of cookies or two or more batches of cookies. When each batch is mixed, dump onto a piece of plastic wrap and roll it up, twisting the ends. Toss them in the freezer for a few hours or over night.

When the roll is frozen, open the roll, slice and rewrap. Next time you need cookies in a hurry, you already have the convenience of the storebought roll with your favorite ingredients and ready to place on the cookie sheet.

Make it go even faster by having 2 cookie sheets. As soon as one comes out of the oven the second is ready to go in. As soon as the cookies are off the first pan, put more on that one.
