Cracker Pudding?
I have been hunting a recipe for cracker pudding much of my adult life. As a child my family would go to Lancaster, PA every summer. We used to eat at a place called Good-n-Plenty that served this wonderful stuff. Anybody ever heard of this recipe?

I have the exact recipe.
[SIZE=2]GOOD AND PLENTY RESTAURANT CRACKER PUDDING
[/SIZE]2 egg yolks*
2/3 cup granulated sugar
1 quart milk
1 1/2 cups coarsely crushed saltine crackers (use the brand name ones)
3/4 cup coconut
1 teaspoon vanilla
may need 2 tsp salt (taste first)
Beat egg yolks and sugar together; pour into double boiler and add milk. Sitr constantly so it doesn't burn. Add crackers and coconut cook until thickened. Remove from heat and add vanilla (and salt, if needed). Cool and then chill in refrigerator.
Serve cold.
*You could use the remaining egg whites to make a meringue for the top, but they didn't do that at the Good and Plenty Restaurant

My old family recipe calls for the crackers to remain whole and placed in the bottom of the casserole. That way it's more like a kind of crust on the bottom. And yes, we always made a meringue for the top and it was more like a coconut custard pie.
