There was a great sounding one on today's paper. Sort of a combination Shrimp Cocktail and Gazpacho. I will be trying it the next time I have company.
Mexican Shrimp Cocktail
serves 4-8
2# cooked and chilled shrimp
3 med. firm ripe tomatoes, diced
1 cup tomato juice
1/2 cup ketchup
1/4 cup fresh lime juice
1 small red onion, diced
1 small English cucumber, diced
1 small jalapeno, seeded and minced
1/4 cup chopped cilantro
Mexican type hot sauce, optional
2 ripe avocados, diced
2-3 lime wedges, for garnish
Mix ingredients together, except for avocado and lime wedges. Chill until ready to serve. Divide into individual servings (wide mouth jars with lids or other) Top with avocado and lime wedges before serving.
I've eaten that in a Mexican restaurant - it's really good. The one I ordered also contained oysters and octopus.
