Any good SUMMER recipes for butternut squash? (mustard, pepper, onions)

Most butternut squash I have found are more suitable for fall/winter than summer.

Can anyone make any recommendation for summer?

There are quite a few Butternut Squash Gazpacho recipes online. Look for the ones that include a fruit, such as mango, for a refreshing summer treat.

Roast squash cubes. Toss with a mustard vinaigrette dressing while still warm and add whatever you might like in potato salad - green onions,shallot, bacon, diced pepper, etc.
