Making a Shaker lemon pie.

You blanch 2 whole lemons in boiling water for 30 seconds, fish them out to cool, slice off the nose on each end, and use the slicer to slice them as thin as paper, skin and all.

Pour over 1 and 3/4 C sugar and let them sit for 8 hours or overnight stirring once after the first hour (I also took the liberty of fishing out the seeds).

Fish out the lemon slices and arrange them in the bottom of an unbaked pie shell. Into the sugar mixture left behind, you beat 4 lg eggs and 1/4 tsp salt. Pour the mixture over the lemon slices. The recipe says to use a top pie crust but I didn't.

Bake at 425 for 25 minutes, then 375 for 30 minutes.
