Speaking of pancakes in another thread, I found my large jar with the recipe for my homemade pancakes taped to the side. BUT I used to have modifications for it so that I could use the mix to make waffles, muffins or quickbreads. I think you had to add more oil? More milk? But you could turn the basic mix into other things and it was very convenient.
Here's the basic recipe that I use:
1 3/4 cup flour (regular combined with whole wheat) But you can add in any other flour too.
1/2 tsp. salt
2 tsp. baking powder
1 Tbs sugar
a little bit of flax meal
To make pancakes I add some milk, an egg, and a bit of oil.
Can anyone help with how to modify the basic recipe for waffles, muffins, and anything else? Thanks.
Just look up a muffin recipe. Your 'mix' is essentially flour and raising agent. Use it as flour in the muffin recipe, and don't add extra baking piwder.
