It will work just fine, I make a honey-lavender ice cream frequently. But FYI, sugar is sugar, and your body processes it pretty much the same way no matter what form you ingest it in.

Yup. So is brown sugar, HFCS, Raw sugar, etc etc. Your body ultimately processes all sugars the same way. Honey is considered "better" for you because it has some nutrition associated with it.

Okay thanks. I was going to make pomegranate ice cream next. All the pomegranate recipes I have read so far though, all say to not use eggs. Yet when I make popcorn ice cream, all the recipes say to use egg yolks. Why wouldn't I use egg yolks with this one but yet the popcorn one. Is there a reason?

Honey has more calories per teaspoon than sugar. Since you're making ice cream, I wouldn't worry about it.

Okay thanks, I won't worry about it. When it comes to making pomegranate ice cream, some recipes say to use pomegranate juice instead of whole milk, and that I should just mix the juice with the heavy cream. Where as other recipes say to add both whole milk and pomegranate juice.

Can anyone tell me which recipe is the better one?

Some recipes also say that you don't even need to use an ice cream churner machine, and just put the mix into the freezer overnight instead. If this is true, than what is the point having a churner machine then?

You need to try different recipes and different techniques and figure out what you like best.
