Our friends went camping up in Wisconsin and brought back 10 pounds of cherries. They're having a party this weekend and I will be making dessert for 20-30 people. I do not want to bake pies. I like to bake--just not pastry. What else can I make?

Cherry crisp? A homemade "crisp" with crumbly butter and oatmeal topping is one of my favorite things. Maybe slivered almonds on top too?

This cherry sauce looks interesting. I would probably substitute something else for sherry (kirsch?) but it sounds good over vanilla ice cream or cheesecake. Might be challenging to serve a crowd, though.

Mother used to make cold cherry soup with cream of wheat dumplings.

Cherries
salt
water
cinnamon sticks
lemon juice and sugar

Remove pits from cherries.Cook gently cherries with all above ingredients.When cherries are soft remove cinnamon stick. Add a bit of cornstarch it thickens the sauce and serve with semolina dumplings,waffles,or pancakes.

Or I like this cherry cake from Blankenhain/Thuringia/Germany.

I always think of cherries as a late Spring early Summer crop. What kind of cherries are in season now in the north country?

They were picked fresh and frozen. Not sure what kind, but they are from Door County.

You're right, and it is even on the front page.

I am leaning toward making either a big cherry crisp (disposible aluminum pan!) or a couple of cheesecakes and the cherry sauce. My friends are making cherry BBQ sauce and smoking a couple racks of ribs.

The cherry cake above looks terrific. With 10 lbs of cherries I am sure to have enough to make a cake at a later point.

Ahhhhhhhhhhhh, I thought I was missing out, I love fresh cherries.

I usually only see Bings and Rainiers in local markets, if you've got tart cherries I think I'd be looking at some kind of sauce to go with duck breasts, maybe something with a little balsamic reduction.



Actually , sweet cherries might be good with a balsamic reduction over duck.
