Wash or peel the sweet potatoes. I use the peels and all because of all of the extra vitamins/nutrients.

Shred them with a hand shredder or in food processor.

Toss with your favorite seasonings such as salt, pepper, onions, garlic powder, cayenne pepper, etc.

Heat up a tbsp or 2 of non-flavored coconut oil (which is a very healthy fat) in a frying pan on med to med high and add the shredded sweet potatoes. You can divide them up or fry as one big hash brown.

When the edges start to turn a bit brown then flip. You will get used to when you need to flip them based on how brown they get and how brown you prefer them. They are a little bit different than making potato hash browns because of the natural sugar in them.

They are so easy to prepare and come out so crispy and crunchy by using the coconut oil. It is almost as if you are eating potato chips but yet soooooooo healthy! And so YUM!

Last time I made them I added some shredded sharp cheddar cheese to the shredded sweet potatoes. They were fantastic and made them very rich tasting and extremely filling.
