I have a recipe that call for wine. The problem is I don't drink wine so I don't have it around and to go out and buy a bottle of wine for this recipe is not practical. I there anything that can replace the wine or should I just leave it out? What would you do?

I would just use stock or water.

It depends on the recipe and flavor profile you're looking to achieve.

I have a gumbo recipe that calls for 1/4 cup of wine. I've substituted 1 tablespoon of apple cider vinegar + 3 tablespoons of chicken broth, can't tell the difference in the finished product.

You tried this before with Beef Burgundy...

You can't expect recipes to turn out like you think they will if you don't use the ingredients that are actually in them!

Try vermouth. It keeps in the fridge. Not exactly the same flavor as wine but in more complex recipes it works well. You can get very dry white and a red or rose that have varying levels of sweetness. Beats having to buy and store open wine. The other option is buy splits of whatever wine you need if you can find them. My local liquor store usually has dry red and white splits in a six pack.

Those little 4-packs of wine in small bottles are perfect.
