It's that time of year again when prime rib goes on sale. $4.77 a pound at my local Grocery store. I plan to make this for New Years Eve. Always make the Anne Burrell Recipe and it comes out perfect every time.
I have a nice one in the freezer. I expect we’ll make it next week, while we have company. Hubby and I will be by ourselves on actual Christmas, so I hope there are leftovers. Fat chance.
I usually make Prime Rib for Christmas Dinner, but we won't be home this year.
I cook the roast on very high heat (500') for 25 to 30 minutes (5 or 6 minutes per lb) and then turn the oven off. I leave it in the oven for a couple of hours. It always turns out perfect.
and I love beef especially rare, juicy and dripping...
Man Fire Food is a show on The Cooking Channel. Last night they did a compilation show where they showed all the steak houses and other restaurants who serve large portions of beef. There were a lot of places with special cookers that held 1/2 sides of beef and rotisseries where they cooked/smoke large rib roasts. It was hog heaven but with beef.

does it come out medium rare?- would prefer rare to well done, this method looks intriguing ...
well I ended up doing a combination of things- rubbed it with an organic spice rub (garlic, thyme, pepper, amongst other things) and olive oil, let it sit overnight- was in a bit of a rush so couldn't wait for oven to heat to 500 so settled for 450 for 15 mins than turned down to 350 for 30 mins , turned off oven while I went to do a pick up (that took 40 mins)- it turned out incredibley tender, flavorful, rare in the middle just as we liked it - it was about 4.75 lb roast- very very yummy (I did heat the oven back up to 350 for about 15 mins before serving so that it was warm, and little more cooked, still very rare and juicy!
