I'm planning on making some freezer dinners this weekend, and one of the recipes I'm using is for individual chicken pot pies, top crust only. Would I be better off just freezing the filling, defrosting a couple when needed, and placing the crust on top just before baking?

I'm using regular pie crust, rolled out and cut to fit. I'm wondering if defrosting it with the crust already in place will leave me with soggy crusts.

We make a batch with full crust (top and bottom) and freeze them with the raw crust. The crust is never soggy after we bake them.

I have frozen baked biscuit size cut outs in the past as I never know how many helpings I need. Individually frozen fillings and X amount of crunchy tops.
