Takes about an hour, start to finish.

2T oil
2# boneless chicken, cubed

5 T butter
1 cup onion, diced
1 cup carrots, diced
1 cup celery (optional, my add)
3 cloves garlic, minced
1/2 t. thyme
2 bay leaves
6 T flour
6 cups chicken broth
1/2 cup heavy cream
1 1/2 cups frozen peas

Dumplings
2 cups flour
1 1/3 cups heavy cream
1/2 t salt
1 T baking powder

4 T minced fresh parsley

In a large pot, sauté chicken in oil over high heat until chicken is golden and liquid is cooked off. Remove chicken.
In the same pan over medium heat, sauté the vegetables in butter until the onion is translucent. Stir in flour. Add herbs, broth, cream, chicken and peas. Cover and simmer gently for 15 minutes.

Stir dumpling ingredients together, making a firm dough. Form into walnut size balls. Place in simmering pot and sprinkle with parsley. Cover and simmer for another 15 minutes.
