Anybody twice fry? Cook the fries 'til limp, drain, fry the meat/fish then refry the fries, almost like potato chips, much better. Great with malt vinegar.

Oh yeah, definitely the way to go! There used to be a place on 2nd Ave in NYC called Pommes Frites, made them the traditional way and served with your choices of 15-20 different flavored mayos.

We did some for of partial frying and then finishing when they were ordered at a place I worked in college, but I do not remember all the details. We had a thing to instantly cut a whole potato into slices, then some amount of frying was done, they sat in a fridge and then finished off when ordered. And they were REALLY GOOD.
I asked this place I like so much now - is that what you do? She said no, they fry them through one time. IDK how that works in just 3 minutes, since they are also fresh-cut................
Traditionally accompanied by mayo although I don't turn down salt & malt vinegar.
Hm. Seems I need to finally try the little fry-Daddy I have. For now for deep-fried traditional fries, it's easier to pay $1.72 per order than all the mess and smell. (And they will not tell me their secret seasoning mix, which is amazing). However, I still appreciate all responses on all ways since my habits and tastes change. (Except liking potatoes. That does not change )
