Rarely am I so brave that I would put a bunch of stuff together and hope it works. That is for the experienced cooks, I think.

We like to experiment and most of the time it is really good. Sometimes it needs some tweaking, but that is how you develop recipes. I entered a winter squash challenge once and created a butternut squash ravioli dough with a chicken Marsala filling which came out great. Many of my seafood recipes are the result of starting off with an idea and changing it several times to get the end result I'm looking for.

I don’t think I have a very good imagination, so I tend to use recipes. I’m also a chicken when it comes to spices, so I need a recipe to tell me what flavors to add to things. I feel as though I have the ability to read a recipe, and know what it will look and taste like.

Once I make a recipe, exactly as written, I feel comfortable tweaking it.

I love making new dishes, but when I do I work so fast that someone has to stand beside me and write down what I am doing. By the time I am done I rarely remember it all.

I do the same. It is too bad cause then I have trouble re-creating it or sharing it with others.

I enjoy working with fruit when grilling and hot peppers as well whether grilling or in the kitchen.
