Default Help me design this dessert

I will be bringing dessert for 12 to dinner tomorrow and need some ideas!

First, the meal is very heavy- ham, potato salad, baked beans, sweet potato casserole, rolls and fruit. I asked if I could bring a salad and was told no....

So I thought a lighter dessert would be good. I want each serving in a wine glass and would like it to have eye appeal.

I thought about a trifle-like thing- angel food cake bits, raspberry sorbet, vanilla frozen yogurt, crushed pretzel crumbles & dark chocolate shavings. Could top with a couple fresh berries and mint leaves. For the sorbet, I would use a small melon-baller, but I'd like to use a pastry bag to get the yogurt in the glasses the way I want it. How do you soft frozen yogurt enough to put into a pastry bag?

Any other good ideas that I might try?

Sounds good but what about using cool whip and/or pudding instead of frozen yogurt?

You are so nice to fix such a nice dessert. I'm fixing a light carrot cake (not with pineapple in it) with a cream cheese frosting and that is that.

LOL- you are too funny! The dessert that I fixed was WAY easier than yours... I put angel food cake chunks, a scoop of raspberry sorbet and a scoop of vanilla yogurt in the glasses and put them in the freezer. Then topped them off before serving.

They were a hit- even my uncle who is health conscious asked for one after first declining and then taking a bite of his date's. He was relieved to know the ingredients weren't too unhealthy.

Your carrot cake sounds so good. Nothing beats homebaked cakes, IMO.
