Default Potato Salad-Easy!

I detest making potato salad-the one my family loves as it's so time consuming. Yesterday I had a thought-why not baked potato salad.

I baked 3 Idahos, cooled and cut with skin on. Added chopped scallions,celery,fresh chopped chives, salt/pepper. Added equal parts mayo and sour cream, chopped cooked bacon. No pots to wash, potatoes overboiling!

The flavor of baking them is awesome-this I do not mind making.

I believe I may have read on here that someone else does this to make mashed potatoes but they microwave the potatoes. I tried it and it was pretty good. Such a great tip!

I agree-love potato salad but what a pain the butt-You're alternative sounds good-I will definitely give it a try!

I have had a version of this baked potato salad before long time ago at a family picnic haven't had it in like 10 yrs gonna make some this weekend thanks for reminding me of great taste I didn't even know I missed
