Someone made this once for a potluck. It was all cooked in a crock pot, she gave me recipe but I lost it and never made it. I think it called for a canned cream of something in it, maybe coconut milk also. The chicken was cut up in bite sized pieces, I think celery and some other trace veggies were in it. Anyone have a SIMPLE one pot dump recipe for this? NOT a recipe that you make the chicken and rice separately and sauce.

Thanks everyone! I've looked online a bunch and haven't found anything done in crock pot so far. I've been tempted to experiment but that's never turned out well for me.

This is my favorite. It calls for chicken thighs, but you could easily substitute cut up pieces of chicken.
