I made these tonight to eat during the game. It's kind of made up as I go along recipe.


2 pounds of ground beef
1/2 of a large onion chopped
2 cloves garlic chopped
An 8 ounce can of tomato sauce
1 can red kidney beans drained
1 can black beans drained
1 packet of reduced sodium chili seasoning mix- I used Ortega brand
2 1/2 cups shredded cheddar jack
small can sliced black olives
Jar of sliced Jalapenos (Optional because I did not use)
Guacamole or sour cream for dipping
1 Tbsp. olive oil
1 bag tortilla chips (any kind you like)


In a large pot Sauté onions and garlic until soft, add ground beef and cook until meat is browned. Add Chili seasoning, tomato sauce and red kidney beans. Cook for 30 minutes. I never drain the meat after it's cooked but you could.


In a casserole dish line the bottom with some tortilla chips, top with chili, cheese and black beans. Repeat in layers until there are no more tortilla chips left. Top with more cheese and sliced olives. Bake on 350 for 30 minutes or until cheese is melted. Serve with sour cream or guacamole or both!

it was and DH said it was better than the loaded nachos we get from this local taco place and those are good too.
