Props and a Shout out to DawnMTL for telling us here how to poach a Chicken breast in Pickle juice from a jar.

My normal method of poaching was to use an aromatic, lime or lemon juice, salt, peppercorns etc.

Dawn said the Chicken would NOT taste like pickles..and she was spot on.
What we got here was a lovely, moist, and flavorful chicken that looked and tasted fantastic.

I am thinking the vinegar in the pickling brine was an integral part of the finished product.

BIG Mahalo, to my little Sistah Dawn.

Hokay, Magoo Manor Chicken Salad recipe;

We used bone in Chicken Breasts, meat was plucked after poaching and placed in a bowl..

chopped spring onions added, you can also use red, vidalia, white onions, chopped up..Whatever floats your boat.

a 1/2 apple diced..your choice, sweet is best, I used a Fuji

Chopped up a jarred Vinegar pepper..you can use jarred hot pepper rings too.

scissor snipped fresh Cilantro or parsley.

add Curry powder, I use a teaspoon..use as much as you like..use more if your curry has been on the shelf for awhile...

Sea Salt and Ground Black pepper to taste.
I add a shake of Adobo seasoning.. you can add garlic powder. or none of the two.

Add mayo as much as you like, or yogurt or Sour cream.
Mix it up..y'all know the drill.

I came up with this combo of ingredients because I like the sweetness of the apple ( you can use grapes/ mango/ raisins craisins..go for it.

The vinegar peppers or hot peppers for tartness and heat..

The Curry, because when I traveled through Europe as a 'Youngblood', Curry became my buddy ..and to me, it is an integral part of the recipe..but maybe you don't like Curry.
Then leave it out.

If you want more heat use a jalapeño, or maybe hot sauce...you guys are all good cooks here..I trust you know what to do.

That's it..

Last night we had it on Club sandwiches ..fresh Whole wheat bread, Bacon..packaged sweet potato fries, and a Dill pickle Spear.

Lunch today was. the Chicken salad stuffed in a Pita bread..small bag of potato chips and some Arizona Iced Tea.
Life is Good.
