This morning I put on my eggs cheese, salsa, hot sauce, Lawry seasoning, and some greens that I can't remember the name of. Its a common name of a green leafy product. Anyway it was quite good. Maybe that is common stuff for some people. anyone use anything that is unusual. Probably something that no one has thought of.

Those first 3 ingredients are common for Huevos Rancheros. Sometimes we put go****ang with eggs for a Korean dish.

No on, but in. I like thinly sliced asparagus, sauteed a bit then pour the eggs over it. The best for me however, includes the asparagus, plus chopped pieces of linguica and green onions, bean sprouts, then shredded cheddar cheese on top.
I've put fish, lobster, shrimp, various sausages/meats, yes, chicken too, various vegetables. One of my favorite ways to make eggs is to mix eggs, yogurt, feta cheese and a tiny bit of flour to hold things together. mmmmmmmmmmmmmmm mmmmmmmmmmmm mmmmmmmmmmmmmmmmmmm
I'm willing to put just about anything on eggs, and I have, whether it's leftover veggies, meats or seafood. But I may be more likely to put eggs on top of other things.
Not recently but I used to put sliced vienna sausages, shredded cheddar and salsa in with scrambled eggs. Tastes better than it sounds.
