Just finished making one, with heirloom tomatoes, in the oven. I think I'll start using a deep dish crust, as just a regular crust doesn't have enough space for all the ingredients, lots of tomatoes, green onions, herbs, cheese, mayo....that I want to use...

do you use deep dish, and do you make it a double crust pie???

Do you add anything other than what I listed?? If so, please share your recipe.

Here is the one I use...

2 pie crusts, prepared according to package directions.
2 pounds summer tomatoes, thinly sliced (drain before using)
1/4 c chopped herbs basil, thyme, parsley etc
1 bunch spring onions sliced
1 1/2 c shredded extra sharp cheddar
1/3 c mayo
1/2 tsp salt
Ground pepper to taste.

Oven at 350 degrees

Layer all ingredients, spreading last with mayo. Place 2nd crust over top, crimp to seal edges, cut 4 steam vents on top.

Bake until golden crust, 45-50 min. Let stand 10-15 min. before serving.

NOT a low calorie food

I love these but husband wont eat it mayo in it and he will know believe me . I would love to have one though but such a waist to fix for myself . I may make one for church picnic but probably wont cause there are a lot of picky eaters at church too and some on restricted diet .But these sound delish so enjoy OP .

Maybe you could bake a couple of tomato 'tarts' so you could have enough just for yourself.

OP, I like a little crumbled bacon in mine.

You could try sour cream.....

I sometimes make a small one in a 1/2 size pie plate I got from Dollar General.
