It's the difference in what product is used to make the vinegar, Gerania. Fruits make cider vinegar and grains make white vinegar.

That's VERY different. I was thinking that the taste would be awful, but now that I've thought again, Filipino cooking often includes a lot of vinegar and I kinda like Filipino food.
