This is a delicious salad and very pretty. It's red color makes it appropriate for July 4th tables.


Broccoli Pasta Salad with Roasted Red Pepper Pesto

- 12 oz. cooked rotini pasta
-4 cups lightly steamed broccoli florets
- I cup artichoke hearts, quartered
-3 green onions, diced
-I cup grape tomatoes, halved

Pesto -

3 large roasted red peppers - jarred are fine
4T pine nuts
2T grated cheese (parm, Assiago, or Romano)
2 T lemon juice
2 cloves garlic, minced
1/2 tsp red pepper flakes
Sea salt to taste.
chopped fresh basil - or dried - to taste

Combine in blender. Coat Pasta and Vegetable mixture with Pesto sauce, chill.

Variations - toss with crumbled Feta. Add Kalamata olives. Add capers.

sounds so good. Now I hope I can remember to check it out next time I need a new salad idea.

This sounds tasty. I'll make it soon.

I'm wondering if adding some small (1/4-1/2 inch cubes) pieces of a really good hard salami would be good.
