I used to enjoy Nothing Bundt Cakes and wanted to make a knock off version but I realize now that Nothing Bundt Cakes are probably filled with mayonnaise (in the cake batter) and the frosting is mostly cream cheese. This icked me out because I hate mayo. But I'd like to get the same cake texture without using it.

Ok, I'm confused. If you enjoyed the original that may have had mayo in it, why does it "ick" you out now?

And mayonnaise is basically eggs and oil, which are normal cake ingredients. You might not love it on a sandwich, but mixed into a cake batter doesn't seem like a huge deal.

How about a Pound Cake in a Bundt pan? There are lots of recipes for them.

Why do you think there is mayo in the cake if you don't have a recipe? There are many things that affect cake texture and moisture levels. Oil based cake tend to be more moist.

This.

It's just eggs and oil, which are in a high percentage of baked goods, anyway.

There are zillions of cake recipes that can be baked in a tube pan.
