Patty pan squash are so cute, custardy and easy to cook with! They taste and look so good when stuffed.

https://www.katrina-runs.com/stuffed-pattypan-squash - This recipe is very easy and tasty. The Swiss cheese lends a nice tangy contrast to the delicate flavor of the squash, and the thyme and sage combination lend a homey taste.

I also have a recipe for roasted patty pan squash with chick peas and herbs.

Another way to make them is sautéed with quartered cherry tomatoes, zucchini, baby bella or white mushrooms, diced onions, garlic and herbs.

We love it simply sauteed in butter with onion and some garlic.

I usually steam them and serve with a sprinkle of salt and a little butter. Sometimes I skip the butter and just enjoy them au naturel.

I like to pan steam them. I put water and butter in a skillet add the squash, a little S&P, cover and steam. When the water evaporates, the butter makes a nice glaze.
