Has anyone had any luck freezing anything with bananas that didn't turn black or get a gnarly texture once defrosted?

I'd like to make a bunch of bananas foster & freeze them. I have frozen French toast before & it was fine when heated slowly in a cast iron pan for breakfast. Have a dozen bananas to use, so wanted to do the same. Thoughts?

I freeze them quite often, but mostly ripe bananas that started to get brown spots on the skin.
Remove skin, slice in 2" chunks, place on a tray/wax paper each piece separate from the other, single layer and freeze. After they are all frozen, transfer them to a freezer bag.

I don't know. I'd think that once they are cooked and sugar coated, they should be OK, but I've never tried it. Lots of things that don't freeze well fresh are ok to freeze after they are cooked.

You do the experiment. OP and let us know how well it works.

Your recipe looks delicious.

I've frozen bananas raw and they are ok to use later in banana bread or banana cake. I try really hard to not buy bananas that won't get eaten before they approach over-ripe. They aren't my favorite fruit to freeze.

Hi El... when you want to use them, have they blackened or turned to mush in the freezer? Awhile ago, someone told me to freeze them in the skins & the bananas don't turn black but the skins do. True, but they were inedible... absolutely turned to liquidy mush once defrosted & had a weird tang to them. I made a smoothie & could barely get it down... tossed the rest of them.

That's what I was banking on... covered with some sort of "sauce" they might last. I will try freezing 1/2-dozen pieces of Foster & let you know soon.

Yes. I don't like to freeze anything, especially produce. But, I was at Costco & they only came in bags of a dozen. I thought the recipe might work... will do it tomorrow, after I get bread from the store. I'd bake it myself tonight, but I ran out of flour.

They are slightly darker than unfrozen, but still looking good. And yes, the consistency change, they are more mushy, but ok to bake (bread, cake) or use on a toast. I put little butter, sugar and cinnamon on the top, then nuke for 30 sec and eat with an ice cream ...

Guess I made a mistake. I only like bananas ripe & raw... no banana breads or muffins, etc. I also don't have a blender any longer, so can't do smoothies & since I'm moving in 10-wks, won't buy one now.

I'll buy bread in the am & will use as many of the 9 bananas left to make bananas foster. I have a feeling if they're covered in sugary goo, they'll be fine. And, they'll be premium ripe in the am, so I've got to do something fast.

I'll keep ya posted.

Oooops, I just noticed, A.T.G. you are asking about freezing COOKED bananas. My suggestion was for the raw ones. I never dealt with cooked ones...

That's okay, El. If freezing were successful with uncooked, I'd be interested, too. I just froze a bunch of blueberries & strawberries raw, using the method you described. And, I made coffee cakes with a dozen peaches & then froze it all... everything was so ripe, I had to move fast.

But, bananas are far more fragile, so I thought I'd ask how others have done it successfully. Mush isn't what I'm looking for... so, the cooked French toast might solve that issue. I'll let ya know.
